Nourishing Traditions by Sally Fallon and Mary Enig. This is the single most important cookbook you will ever own because it is more than just a cookbook. It is also a valuable educational tool.

You would expect a book by a graduate of MIT to be scholarly and well researched and this one is.  Lays out how and why raw milk from healthy, pastured animals has such extraordinary health benefits that is was once used to cure many diseases.  Includes lots of research concerning the healing powers and nutritional value of raw milk from healthy animals, plus some of the history and political/scientific/economic influences of the dairy industry over the last 150 years. You will weep over the plight of commercial dairy cows.
